On Vacation

I know I haven’t posted in about 3 weeks. I have really missed blogging. I have so much to tell you all. 🙂 We have had a wonderful vacation and will be back in a couple of days. I am looking forward to telling you all about our trip. I appreciate all your prayers while we have been gone.

Pineapple Casserole

My family loves pineapple so this is one of my favorite recipes that we fix for Thanksgiving. Sorry I don’t have a picture yet. I will update with a picture after Thanksgiving. 🙂

Baked Pineapple Casserole

  • Two 15 oz cans of pineapple tidbits drained, save the juice in a bowl to use later
  • 1 cup sugar
  • 1 cup cheddar cheese finely shredded
  • 5 T flour
  • 1/3 cup pineapple juice, from canned pineapples
  • 1 stick of butter melted
  • 1 stack Ritz crackers crushed

Preheat oven to 350 degrees. Put drained pineapple in a 8 x 8 baking dish. In a bowl mix sugar, cheese, and flour. Then pour this mixture over the pineapple. Next pour 1/3 cup of the saved pineapple juice over the sugar/flour/cheese mixture. In a bowl mix the crushed crackers with the stick of butter and then spread this on top. Bake for 25-30 minutes at 350 degrees.


Name Change

Half pint does not like her cyber name. She has requested that I change it to Little Bit. Since this new name conveys the same meaning, I have decided to comply with her request. So let it be written, let it be done. From here on Half pint will be called Little Bit….until I slip up and use the wrong name. 🙂 She picked a couple of pictures for me to put on here with this post.

Little Bit says, “With this ice cream beard I really don’t look like me. You might want to say blog.” She and overachiever are always telling me to take pictures of things to put on my blog. Oh my little bloggers! lol

Baby Boy has started walking the past couple of weeks. It is so incredibly cute how babys walk at first. With his new mobility he has also learned that he can climb things. I have to watch him constantly. If I give him two seconds, he will be doing something like this:

Fighting the Flu

Since we will not be getting the flu vaccine ever again I have been looking for ways to boost our immune systems. I ran across this very helpful site written by a nurse called Raise Healthy Eaters. She has a post about eating healthfully to boost your immune system. She gives more detail, but there are 10 foods she encourages you to eat. I had 8 of 10 in my house, but hadn’t known to focus on making sure everyone gets these on a regular basis. Here is her list of foods. Again, she explains more on her site, but I am just listing the foods.

  1. oranges
  2. yogurt
  3. nuts
  4. Vitamin D
  5. winter squash
  6. milk
  7. protein
  8. certain fats
  9. avocado
  10. eggs

My kids are eating home-made bread and yogurt here.


I know I am probably opening a can of worms with this one, but I think that it is important enough to discuss. I am not going to even pretend that I know enough about this to tell you what you should do. But that sort of begs my point. Who does know enough to make the decision to vaccinate you or your child? Aren’t you the one the decision rests on ultimately?

So everything here is what I have found by searching and reading. I make my decision clear, but please know that I would never try to tell you what you should do regarding vaccines-other than the fact that we should all make educated decisions. Continue Reading »

New Shoes

I actually typed this post quite a while ago. The hold-up has been getting a picture of baby boy with his shoes ON. He really doesn’t like them yet. Every time I think to snap a picture he has gotten them off. Anyway, you can scroll down to see my solution! 🙂

My kids love it when we get to buy new shoes. Doesn’t happen very often around here. Usually we have some hand-me-downs or I pick some up from a consignment sale. But occasionally, they grow unexpectedly or it is much colder earlier than expected and we need shoes. I don’t have boy shoes either, so baby boy got his first shoes today.

overachiever picked out boots to look like her Aunt Loco’s boots. She calls herself “Miss Brown” in this outfit.

Half-pint’s favorite shoes were pink ones on the clearance rack. I did buy her some winter appropriate ones, but these were her favs.


Baby boy didn’t have a choice. Mommy picked them and he really doesn’t like shoes on his feet yet. He did manage to leave his socks on all day yesterday though. Progress.
